Dulce de Leche Banoffee Tiramisu

This makes one seriously decadent dessert where traditional tiramisu is taken to a whole new level with the addition of our silky-smooth Dulce de Leche and bananas.

INGREDIENTS

  • 250g mascarpone
  • 100ml cream
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 1/3 cup sugar
  • 200g lady finger biscuits
  • 350ml strong coffee
  • 1x jar Dulce de Leche
  • 4 bananas, peeled, sliced
  • Cocoa for dusting

 

METHOD

  1. Put the mascarpone into a bowl along with the cream and the vanilla.
  2. Using a fork, mix well until smooth.
  3. Separate the eggs and put the yolks into one bowl and the whites into another.
  4. Beat the whites until soft peaks form, then beat the yolks together with the sugar until pale and fluffy.
  5. Mix the egg yolk mixture into the cream mixture then add in a third of the egg whites and gently fold to combine.
  6. Add the remaining whites and again, gently fold in until combined. Set aside.
  7. Arrange half of the lady finger biscuits in a large serving bowl.
  8. Pour over half the coffee then spoon in some Dulce de Leche and spread this over the biscuits. If your Dulce de Leche is too thick, heat it in the microwave or put the jar into hot water to thin.
  9. Next, arrange the bananas on top then follow this with half of the cream mixture.
  10. Repeat with the remaining ingredients then sift over the cocoa. Cover and refrigerate for 4-6 hours then serve!
